can anyone recommend a good Nigerian/Ghanaian type stew recipe

like one of them oily tomato based stews

thanks

Oil

Blend two cans of plum tomatoes, two Scotch bonnets, two big onions and two red bell peppers and some drops of Maggi

Cook that sauce

Season beef and diced chicken separately, garlic and ginger paste, curry powder, I think thyme. Cook them separately from the stew sauce

Cook the sauce for about 30-45, stir often

Then put the meat into the stew, add some more seasoning to taste

My girl does hers roughly like that. Can't give exact times and measurements, more experimental and too taste

got served a veg lasagna on Saturday evening that I've been thinking about ever since, was amazing, but she told me she spent a while making the sauce, etc

yeah my issue is protein options feel boring, I've done the falafel/chickpeas, tofu, beans, quinoa... but I'm not inspired

c/s you feeling better though, I've not once had that feeling of needing to wait to digest before doing anything, you never have that feeling of weight in your stomach, or tiredness after eating

but you have to plan your meals better, and put a little bit of effort in

im too lazy to be that person but I'm definitely gonna cut down on meat consumption overall
