In regards to Melisandre -

Thats her true form, in an interview before the season premiere the writers said she is "several centuries" old. The ruby necklace is the source of her power. The book goes into greater depth with this, but hints have been sewed ever since season 2.

theres a theory about the scene – suggesting that, during it, Stannis’s wife Selyse may have been seeing Melisandre’s true self :
