Two pages

always two pages NEVER more!

one page cv for fresh out of school/uni I guess?

Yeah got my grad job off of one page. Seen a couple jobs this week that I want to try and interview for at least and see if I can pull it off/learn what skills I am missing to make the next step up etc

Cool, will work off of two pages

Doesn't matter bro. What matters is your summary at the start of the CV. If they find you intriguing they'll be willing to read the rest of it and from my experience the more information they have available at that time the better they're able to qualify you and get you in for an interview.

You always want to have a summary of your key skills and experiences at the start, this is what I learnt from recruiters who work with people who trawl through hundreds of these things.

My CV is like 3-4 pages because I went indepth on my last 3 roles including responsibilities and key achievements. Bullet points are cool, just make yourself look as interesting and dynamic as possible.
