I found the demo pretty useful for pulling piano parts of songs for piano practice.

The only way I can think of how this works is by analysing the main frequency of say a violin and then trying to filter out everything else, which anyone with a basic production level knows that it can only go so far and can't give you the same results as if you've been sent the stems.
