Yolk gets chalky when its hard, it sucks all the flavour leaves it. And the Egg whites are literally the Embryonic fluid used to protect the yolk, its like eating the sac water a baby is grown in and then leaving the delicious meaty baby. Runny yolk doesn't mean the Egg isn't cooked properly at all.
