Cooking dons, I need some advice regarding roast beef.
It is only a small cheap cut of Topside Rump Joint 825g , I want it to be as tender as possible, how do i go about this?
I have looked it up on google but the reviews i have seen hardly help, plus im not cooking it in water etc..
What i had planned on doing was brushing some oil on it and seasoning it with salt and pepper, then putting it in the frying pan on a high heat turning regularly to seal in the juices.. Then put it into the oven and basque it regularly. How long should i cook it for and what gas mark should it be on for optimal tenderness?

Season and cook in some form of liquid as you wish
Red wine compliments beef well.
Put in a hot oven at a very high temperature for around 30mins
then cook at a lower temp until cooked (to your preference well done, medium/rare etc) max time to cook would be around 2hours for well done.
