One of the few dishes in which I enjoy lentils
Eat meat once or twice a week these days but the dullness in the lack of variety in meals is creeping on me now. Need to set time aside to explore more recipes.

You could try a mix of red grape juice and red wine vinegar but that would be pointless imo

you won't taste the flavour of the wine, it just adds a richness and balance... and all the alcohol is cooked out anyway

For the coriander Puy lentils
- 50g/2oz butter
- 1 tbsp olive oil
- 1 shallot, finely chopped
- 1 garlic clove, finely chopped
- 1 sprig fresh thyme, leaves only
- 2 tsp cumin seeds
- 1 tsp ground coriander
- 300g/11oz Puy lentils
- 175ml/6fl oz red wine
- 450ml/16fl oz chicken stock
- 2 tbsp Cabernet Sauvignon vinegar, or other red wine vinegar
- salt and freshly ground black pepper
